Agua
Agua is a
casual dining venue perched on a dramatic bluff overlooking the Sea
of Cortez, adjacent to the resort's spectacular new infinity-edge
pool. The al fresco, palapa-style restaurant serves what is being
dubbed “Mexiterranean” cuisine – a unique hybrid of Mediterranean
fare with Mexican influences, for breakfast, lunch and dinner.

Celebrated chef Charlie Trotter brings his sublime culinary talents
to Los Cabos. True to Trotter's creed that “the best is the only
thing good enough,” C emphasizes indigenous flavors and the area's
freshest regional seafood, in addition to meat and game. A
world-class wine list features a wide range of vintages designed to
pair effortlessly with the cuisine.
The restaurant offers
guests a variety of dining options, including the 110-seat
dinner-only main dining room, which showcases two glass enclosed
Wine Rooms, a Private Dining Room, a semi- private Cellar Dining
Room, and a Chef's Kitchen Table in the show kitchen.
The Private Dining
Room, seating 10, and invitation-only Chef's Kitchen Table, seating
eight, both serve Charlie Trotter's signature “dégustation” menu,
offering diners a variety of courses, each paired with
individualized wine selections.
