Sol so that you can wake up to freshly baked breads and pastries.
We know
that different people have different ideas of a perfect vacation. Some
like to dress up in their finest yarns to enjoy impeccable service and
gourmet food, and others are happy to ban any kind of formal dress to
the darkest corner of the closet for a few precious days and exchange
the "Bankers' Club's" entrecôte for a gloriously simple grilled fish.
We can
fulfill all your wildest culinary fantasies at our two great
restaurants. If you are dreaming of an elegant candlelit dinner with
fine wines, sophisticated international cuisine and subtle classical
music then go straight to "The Restaurant at Villa del Sol." For those
of you who prefer a more informal and casual atmosphere where your
favorite Banana Republic shorts are perfectly within the dress code we
created "La Cantina Bar and Grill."
We
always have to stop ourselves from bragging too much about "La
Cantina," (we think it is the most beautiful restaurant on the entire
Pacific coast of Mexico), but truly, the grilled fish and
Mediterranean-style food are lip-smackingly good, the lively music
will make you want to dance, and the setting is just absolutely
unbeatable . . .
Forget
everything you ever thought you knew about "Mexican food" – there is
no such thing as a "burrito" in Mexico - and let us introduce you to
the amazing flavors and textures of authentic Mexican cuisine. Our
French chef Fabrice and his knowledgeable kitchen staff pride
themselves in finding just the freshest local produce and seafood to
create colorful dishes bursting with flavor. For his garden-fresh
organic herbs Fabrice will not have to go far in the future. We are in
the process of planting him a little kitchen garden right here at
Villa del Sol. Maybe there will already be some house-grown
vine-ripened tomatoes in your salad when you come to visit.
Our
Mexican Fiesta buffet on Friday nights is a feast for the eyes as much
as for the palate and gives you an opportunity to sample a variety of
traditional Mexican dishes. In our famous "Chicken in Mole Sauce" a
drop of chocolate takes away some of the spiciness of the different
types of chilies; the unbelievably tender "Lamb Barbacoa" simply melts
in your mouth, and the wonderfully flaky steamed sea bass has
definitely never tasted better than with our fresh tomato salsa. After
you have tasted our tortillas you will never again think lightly of
this simple Mexican staple – Micaela makes them by hand, and they are
good enough to eat by themselves! Shall we talk about dessert? Save
some room for some fresh mango "tacos", and definitely try the
delicious sugarcane and cinnamon flavored "Café de Olla" – for coffee
lovers this will be a true revelation.

While
we do try to entice you to sample the wonders of the Mexican cuisine,
"The Restaurant at Villa del Sol" serves a great variety of fine
French and international dishes as well. Anything your heart desires –
if it is to accommodate your special diet or just to satisfy a
particular craving – can be prepared for you if you give us a day's
notice.

It
is hard to describe just how beautiful "La Cantina" is. A huge wooden
deck, partially covered by a wooden pergola, sits directly on the fine
white sand of Villa del Sol's private beach. Candles in sand-filled
paper bags light the way from the beach to the front steps. Torches are
stuck into the sand to illuminate the tables on the very edges of the
deck. Oversized wooden chairs – painted sky-blue – that almost allow
you to dangle your feet while eating would transform you straight into
Alice in Wonderland if the sea turtle's appearance had not already
done so.
Twisted
tree trunks hold up the roof and a long, smoothly polished bar winds
itself halfway around the front of the building and continues inside
to allow peeks at all the gorgeous sights inside and out. Seated
outside you catch a good look at "La Cantina's" cheeky mural depicting
skimpily-clad, rather voluptuous ladies being serenaded by rotund
mariachis
